A little history…

Cinnamon is one of the most widespread spices in the world. It was known to the Ancient Greeks and Egyptians while it is even mentioned in the Old Testament as "cinnamon". Written testimonies of the 1st century AD. they report that 350 grams of cinnamon was worth as much as 5 kilograms of silver, while a few centuries ago even wars were fought for its sake!

The plant

There are 250 varieties of plants from which cinnamon can be extracted but only four are used. The most important varieties are cinnamon or genuine  (Cinnamomum verum) referred to in the market as Ceylon and cassia (Cinnamomum cassia) referred to as Chinese.

Cassia and Ceylon cinnamon come from the inner bark of Cinnamomum trees, the  Ceylon  cinnamon is preferable. Ceylon cinnamon is usually more expensive than cassia, and is also more closely associated with potential health benefits.
